Named for its resemblance to a rooster's crest, Creste di Gallo Piccolino features the same curved shape and ridged "mohawk" that make it a favorite for catching sauce, only sized for an even more versatile bite. We craft it with family-farmed semolina from Italy (never sprayed) and organic durum flour from central Illinois, then extrude it through traditional bronze dies to create a rustic texture that sauces cling to beautifully. A slow-drying process develops deep flavor and delivers the perfect al dente bite.
